Begun in February 2009, Red Hot Mommas is a business start-up based in Clermont, Florida. It was born out of an idea two moms had while trying to find a way to bring in some extra income for their families after both families' incomes dropped due to unforeseen circumstances.
Living is not only sports, carnivals, dancing and beaches! It is also food. While going to Brazil you will feel how it is to be in heaven of great food and wonderful drinks. For example very exotic juices are available in abundance - not only from avocado, passion fruit or papaya but also fruits that don't exist any other place like acai and guarana. As it comes to cuisine the types of dishes depend on the region. For example the national dish in Rio is slow cooker Feijoada ( black bean stew, with cuttings of pork and with a slice of orange) while in other regions there are different opinions in this subject.
One of the most important steps to take is to buy your meats in bulk. When you stock up on large packages of ground beef, chicken and fish you cut down on your protein costs. You can separate the large packages into small freezer bags and freeze them in meal-sized portions. Two to four chicken breasts in a bag are easy to defrost and make a good-sized meal. You can also cook ground beef in many different varieties and freeze the cooked portions. Try doing a portion of the meat with taco spices, another portion with hamburger spices and the third portion with Italian spices. That way you'll be able to use lots of hamburger meat and still have variety brazilian Feijoada in your diet.
The drippings go into a large saucepan to heat over low heat on the stove. I place about three tablespoons of flour and half a cup of water in a small plastic margarine tub, place the lid on it, and shake it until the flour is no longer lumpy. Then I slowly pour the contents into the boiling beef drippings, using a wire whisk to stir. The drippings should thicken within a few minutes. Once the gravy has thickened, I pour it evenly over the roast beef slices and mixed vegetables.
If you'll be having 8 or fewer guests that aren't partial to dark meat, cooking a turkey breast in a slow cooker feijoada is a great option. It's delicious when seasoned with dry soup mix, there's almost no tending involved, it makes its own gravy, it's a snap to carve, and there's very little clean up. A slow cooker Feijoada is also great for pork loin (seasoned with cranberry sauce) and pot roast. If you're not convinced test one on your family a couple weeks ahead of time-you'll see.
Wild rice soup: This is a staple in our house this time of year. Use broken wild rice for a more affordable, quicker cooking option or brown rice if you don't have access to wild rice, and add lentils if you want to up the protein. Just add some rice (and lentils, if preferred) to a big pot of veggie broth (or water with veggie boullion added), simmer and add vegetables such as peeled potatoes, chopped carrots and leeks. Cook until all is tender and then mash somewhat with a hand-held potato masher so it's nice and thick. Stir in a little plain almond milk for a creamy taste (optional) and season with salt, pepper and spices to taste. Serve with rolls, assorted fruit or a salad.
